
Asparagus officinalis
Jersey Knight is an extremely vigorous, disease-resistant, all-male variety with excellent flavor. This is a long-lasting perennial that will produce tasty asparagus for up to 10 to 20 years. Requiring partial to full sun and planted at a 5 to 6 inch depth, Jersey Knights grow up to 3 to 4 feet tall and 1 ½ to 2 feet wide. They are slightly frost tolerant. Once harvested in the summer, one can expect the rich, nutty and distinct flavor to be used for grilling, salads, steaming, stir fry and even canning.
